The citrus and fresh herb notes keep it lively, while that creamy finish makes it feel surprisingly smooth for such a light wine. I opened a bottle with grilled fish and the mineral edge cut through beautifully. This is my new go-to when I want something dry but not sharp.

The mineral finish caught me off guard in the best way—so crisp and dry, but that creaminess balances it perfectly. Beeswax and citrus come through on the nose like a hint of summer in Sicily. Had it with grilled fish and went back for a second glass before dinner was even over.
