Chante Alouette 'Cormeil' St Emilion 2012

Opened this on a rainy Tuesday and the tannins have mellowed into something so smooth you barely notice them. That cedar and fig combination really comes through now that it's had time to settle. Exactly what I hoped for from a 2012 with proper bottle age.

The dried plum and graphite flavors are exactly what I was hoping for from a well-aged St. Emilion, and the resolved tannins make it incredibly smooth to drink now. It's got that perfect balance of fruit and earthy complexity.

The dried plum and cedar notes are exactly as described, and the tannins have smoothed out beautifully with that bottle age. Opened it with a roast on a rainy night and it was pure comfort in a glass. Already thinking about grabbing another bottle before they're gone.
