Opened it last night with a steak and the high-altitude Salta grapes really show—ripe, full fruit without that heavy oak punch. The concrete tank aging keeps it smooth and clean, a nice change from the usual barrel-heavy cabs.

The stainless steel and concrete aging gives this a clean, focused fruitiness without that heavy oaky taste. It's surprisingly smooth for a high altitude wine—perfect with a simple steak dinner.

The altitude really shows in this one—bright, ripe fruit up front but with a savory edge that keeps it interesting. The stainless and concrete aging lets the grape speak without any oak heaviness, which is exactly what I want from a cabernet.
