The gunflint note really comes through on the finish, giving it that classic Sancerre minerality I crave. Poured a glass with grilled trout and the crisp lime cut right through the richness—bought two more bottles already.

The lime and apple fruit comes through clean and bright, but the ripe texture keeps it from feeling too sharp. I served it with a simple goat cheese salad and the minerality tied everything together beautifully.
