The blend of Colombard and Gros Manseng really makes this wine feel more complex than a typical white, with those floral notes carrying through to a clean finish. I’ve been enjoying a glass with lighter seafood dishes, and the crisp acidity holds up nicely without being too sharp.

The tart lemon and apple finish stays crisp right to the last sip, which makes it dangerously easy to pair with a simple weeknight dinner. I opened it with grilled fish and the floral kick on the back end kept things interesting without being heavy.
