I was surprised by how complex it gets as it opens up—the cider-like funk really balances the apricot and citrus. Pairs beautifully with a sharp cheese plate.

Opened this on a warm evening and the cider-like funk hit first, then those dried peach and apricot notes came through with a savory edge that kept every sip interesting. It's the kind of white that makes you slow down and pay attention, and I've already grabbed another bottle.

This is the most unique white wine I've had in a while — that funky cider note is really interesting. The dried peach flavor lingers nicely on the finish.
