Breton Bourgueil Trinch

Opened this with some organic pâté and the earthy notes really came through beautifully. The 40 year old vines give it a depth I wasn’t expecting from a Cabernet Franc. Perfectly dry and mineral-y without being harsh.

I was really struck by how mineral-driven this wine is—the earthiness paired perfectly with a simple pâté plate. The 40-year-old vines really deliver a depth you don't find in younger Cabernet Francs.

Opened it with a simple roast chicken and the mineral edge cut through the richness perfectly, just as the earthy note promised. Those 40-year-old vines really show in the depth without any heaviness, and it stayed fresh from first glass to last. Pâté would be my next pairing, no question.
